My introduction to Kundalini Yoga was from the master teacher Guru Singh.

I recall a story he told about his meeting with the Dalai Lama. The Dalai Lama was pondering one of the sutras and said…

…“I have been at this place many times in the debate of this sutra and every time I get here, all I want to do is run and eat a cookie”

Sitting back with your favourite cup of tea or coffee and eating a homemade cookie is a great way of relaxing.

However, regular consumption of sugar and caffeine will spike then drop your energy and a habit that’s not good for your long term health.

So, for this blog I am sharing a couple of heathy alternatives. Firstly an ultra heathy raw chocolate cookie and then further below, a delicious dairy free iced coffee.

Amazing and Easy Chocolate & Almond Butter Cookies

 

Sometimes the easiest recipes are the best. All you need is a bowl, a couple of forks and you have amazing, ready to eat cookies in around half an hour.

Preparation time: 15/20 minutes
Freezer time: 10 minutes
Makes: 12 large cookies or 20 bite sized nuggets
Sugar: 10%
Cacao: 20%

100g Cacao Liquor (Finely chopped or grated)
100g Almond Butter
100g Shelled Hemp Seeds (Hand sort any shell pieces)
100g Coconut oil *
50g Coconut Palm Sugar or Palmyra Jaggery
50g Pecans (Broken into pieces)
1 tsp Luo Han Guo
Pinch Sea Salt

* (If making in a cold climate, it’s best to ‘fluff up’ the coconut oil before removing from jar. Just use a spoon to scrape and stir and this will soften the coconut oil enough to help with mixing).

Add all ingredients to a bowl and mix together with a couple of forks. Alternatively, if you don’t mind getting messy, wash your hands and then get stuck in!

When ingredients are well integrated, form into cookie shapes of desired size and place on baking paper or a teflon sheet and then into freezer.

These are ready to enjoy after just 5 to 10 minutes. When set, store in a sealed container in fridge or freezer.

First, let’s prepare the milk.

Take half a cup of unsweetened desiccated coconut flakes and 1.5 cups water and whizz well in a high speed blender or use a hand blender. To remove all the bits, poor milk through a nut bag.

Prepare coffee in your usual way, although perhaps make it a little stronger. I use a Chemex coffee filter or an Aero-press.  And to avoid the buzz, I prefer swiss water process decaf coffee.

Mix about 50/50 milk for coffee adding 2 or 3 drops SweetLeaf Stevia for sweetener.  Poor into your favourite iced filled glass!
